
Recipe:
4 cups old fashioned rolled oats (do NOT use quick oats)
1/2 cup shredded coconut
1/2 cup sliced almonds
1 cup dried fruit (I used craisins)
1/2 cup real maple syrup
2 Tablespoons canola oil
1/4 tsp cinnamon
1/4 teaspoon fresh grated nutmeg
1/2 tsp kosher salt
Place everything except the dried fruit on a cookie sheet with edges and toss it around until everything is coated with the syrup and oil. Bake at 350 degrees for 25-30 minutes, taking it out about halfway through to stir it around for even cooking. Once out of the oven add the dried fruit and toss it around. Place it in an air tight container and it will last up to 3 weeks.
Serving suggestions:
Eat as cereal, sprinkle on yogurt, or my personal favorite, top a nice bowl of vanilla ice cream. Yum!
I plan on trying a few things with this recipe like using honey instead of the maple syrup and using different fruits and nuts. I'll let you know how that goes.
